The Seasons are Changing......
Fall Greetings to All! As the seasons change, so does the menu at Maximillians Pizza Kitchen. Michael has the secret in on some AMAZING clams from North Carolina's very own Snead's Ferry. Can't really get more fresh then that, and Donny is using the freshest oregano and roasted garlic with those little necks....delicious. More on the appetizer front is the Wild Mushroom Crostini - variety of wild mushrooms-white beans-fontina-asiago-spinach and balsamic syrup. With the fall colors comes the fall flavors. On the entree side the kitchen is grilling up a mixed grill of Smoked Andouille Sausage and Grilled Lamb Chops over a potato cake with a fresh thyme-wild mushroom sauce. From the Sea there is Phylo Baked Salmon wrapped with Gorgonzola and spinach with a tomato dijonaise sauce over Florentine ravioli. And to warm you up as the cold weather sets in Thai bouillabaisse with chili's-shittake-ginger over glass noodles. Can you say YUM!YUM!? Now if you find yourself getting thirsty the bar has some fun stuff going on as well. Sam Adams Winter Lager is back on tap, as well as G'Knight Imperial Red. The Makers Mark is keeping us warm with some Ginger Manhattans! Be sure to check out the wine list as new arrivals are coming weekly.

Chef Donny is at it again, this time he's getting ready to slow roast some yummy beef shortribs. With fall in the air he's stewing a gorgeous White Bean Italian Ragu to go over those bad boys! Margie is busy baking Dutch Apple Cheesecake and Asian Spice Pear Tart with Michael's honey vanilla gelato. She's also behind the bar and Pumpkin Martinis are flowing along with some wonderful fall beers! See you soon!

Hello all! We have been very busy around here lately, after all, summer is over and new fall menu items are in the works along with some yummy new wine and beers that should be arriving soon! Chef Donny has a little artichoke thing going on these days, he's steaming and marinating them while he misses the Greek Islands.....so, he's got a beautiful Greek Salad with local feta, artichoke, roasted red peppers, kalamata olives, fresh lemon and...wait for it....lightly fried calamari and spicy aioli. He's also into cold smoking some skirt steaks with a potato cake and a spicy demon pesto creme fresh and late harvest tomato. He's still pumping out the mushroom ravioli by hand too! We have two new beers on tap, and more to come as the seasons change!

As the week winds down for most of you, we are getting psyched for the weekend! Chef Donny has been pan frying NC Soft Shell Crabs in a beer batter and they are perfect! Ahh, the end of Summer is here! Donny has some soft shell crabs that have found their way into the beer batter and are being served with a spicy remulaude and mixed greens. Parmesan Gnocchi appetizer is still here with a sun dried tomato Florentine sauce. For entrees he's got some pretty beef short ribs over polenta with a smoked paprika in a yellow curry mushroom medley. Also hitting the entree list, Thai bouillabaisse with shrimp, trigger fish, clams, mussels and chili peppers in a coconut-Thai basil sauce over rice noodles.

Chef Donny is busy!!!!
Hello! Summer is just about over, but Donny is still putting out new specials with all of the local produce coming into harvest. NC Shrimp with a black bean salsa and demon pesto. Wild mushroom-Stilton Blue ravioli or a Vegetable stack with eggplant, spinach, garlic and goat cheese in a mustard-cilantro-burre blanc.

Chef Donny is at it again! He's busy getting some BEAUTIFUL NC Grouper ready that came in from the coast this morning. The PEI Mussels are flying out of here, you tell him how you want it, and he will make it happen. Oreganato, Italian Basil, Dijon, or Thai Curry....it's all up to you. He's also had the pasta machine out and has been cranking some of the best homemade linguine out that you can imagine. See you this week!

Chef Donny has some pretty spinach ravioli going on this weekend! He's also got some beautiful fish in from the NC Coast and let me tell you, that grouper over his ravioli.....yeah, it's that good! The only thing that will make it better than you imagine, our fearless leader Chef Michael is at the gelato making again. He's gone bananas....and made his Banana-Chocolate-Chunk! It's going to be an AMAZING WEEKEND!

The weather has reached 80+ degrees and the menu is cooling off for Summer! Tonight's soup - Gazpacho. On the Appetizer side Donny's doing Mussels - Basil Pesto, Oreganato, Dijonaise or Coconut Ginger Chili, tell him how you want them! Finishing off the Appetizer Specials, Asiago Gnocchi with spinach, feta, and tomato. Entrees - Spicy Thai Medley makes the menu again this weekend, as well as a beautiful fresh Grouper, and NC Trigger fish & Little neck Clams from Sneads Ferry.

Hey Max Fans! Chef Michael has a lead on some beautiful soft shell crabs that will be in for the weekend. Chef Donny has been hand rolling some gorgeous pasta, and I can only guess this weekend specials will be amazing! In the mean time behind the bar, Margie has mixed up her first of many batches of White Peach Sangria.......it's officially Summer! Cheers!

Happy Thursday! Donny has a wild mushroom soup tonight. For apps there are some BIG ass oysters in a spicy remulade with mixed greens and citrus. He also has a smoked Beef Empanada in a tomato-spinach Dijon sauce. For entrees there is a shrimp & scallop puttanesca with tomato & basil over linguine. The Thai combo is back with swordfish, shrimp, mussels in a spicy chili-coconut-cilantro sauce. And the best for last.....Lobster & Shrimp Pillow in a garlic-saffron-tomato cream sauce. So, for those of you headed out to the Bob Dylan concert - stop in for a pizza prior to the gig!
We have tons of amazing pizza tonight, but our Chef Donny has the evening off due to being tangled up in blues, therefore the saute station is closed for the evening, but as I stated - we have faboulous pizza and plenty to choose from as well as beautiful soups and salads. Back to our regular full menu Friday, I'll let you know the specials then! CHEERS!
